The argument i would make for joplin is that it is really easy to get perfect cross device sync by using its internal filesystem sync with syncthing. It is not super complicated to setup though i might be biased by being a developer/having a long technical background.
That being said i'm sure it has its shortcomings and i must admit that what i set out to do: Try to create notes for almost everything i do in my life has not really taken off as i would have liked. I think it is a partial problem caused by my own forgetting/lack of discipline and partially because typing markdown in a phone is not the greatest experience ever.
I don't write professionally so i am but an amateur and just try to keep my life organized in (apparently) a mediocre way.

The opt-out for your car would be some strategically placed black tape, if there's no software option.
