It’s almost time for my by-weekly drive to the States. I’m crossing the border just to fill up on diesel and grab groceries. At least I know my money won’t be going toward some damn carbon tax while I’m at it! I almost feel like an American 😆 #51st_state #confession

First time since 2020 I’ve tuned into a hockey game… still watching, but let’s just say soccer has my heart. 😆

What you need:

• 1 large onion and some garlic

• 1 carrot

• A few potatoes

• 1 zucchini

• Chicken stock

• 1 small spoon of tomato paste

• Olive oil

• Bay leaves, black pepper, salt, and spices to taste

• A small piece of butter

Steps:

1. Chop the onion and fry it in olive oil over medium heat until soft and slightly yellow.

2. Add the chopped carrot, potatoes, and zucchini. Stir well.

3. Mix in a small spoon of tomato paste and fry for a couple of minutes.

4. Add a few bay leaves and black pepper.

5. Pour in the chicken stock and bring to a boil.

6. Reduce the heat and let it simmer for 30-35 minutes.

7. Blend the soup until smooth.

8. Mix in a small piece of butter while the soup is still warm—it takes the flavor to the next level.

9. Add salt and spices to taste.
