I use this Bradley smoker recipe. Brine it 4 days then slice. We prefer no smoke.

Did my own brine cure. Haven’t used the celery method but I do want to try it. Been doing it dir several years with success.

CM is good curriculum.

On our third year now. Started after the covaids BS and never sent them back. We put together our own curriculum from several sources, joined a co-op for a while and do a lot of unschooling. Teaching life skills that will stick with them forever. Raising animals, butchering, gardening, economics, financial responsibility, mechanics, etc etc. Our state doesn’t require specific curriculum and doesn’t audit. However, we do keep everything documented and filed.
