I wasn't filling nail holes, but that's how I applied my first coat of sealant on an oak tabletop.
Wet/dry sand paper to apply polyurethane, boiled linseed oil, and a splash of mineral spirits. Sand to fill in the tiny little pores of the red oak.

He didn't have good results, but maybe he was just an idiot and screwed it up or something.
I'll try to put something together myself and see how it goes I guess.
Still need to figure out how to sterilize substrate if I use sawdust. I guess I could also go the pre-sterilized rice method too...
We started off using "easy bake barrels" to sterilize our substrate in bags. Easy enough build, but not sure if that'll work for your method of planting.
Agar is a pretty good test for cleanliness of mycelium.
Don't breathe anything near the plates or bags. Don't let skin particles fall in. Isopropyl alcohol cleans a fuck ton of shit. Change your filters. Wash up to your elbows. Did I mention cleanliness?

I came in to the production business already in full swing. I still need to learn how to do small scale on my own.
I do know, however, shiitake are a very particular cultivation and do not like hanging out with other species. Their spores will wreck all other fruiting crop in the same fruiting room.
Lions mane and blues are very easy to grow once you have your system down.
Flow hood isn't required, but look into a box fan and a MERV filter. Clean inoculation = healthy grow
