Stage one (the 10 minutes at 240C) that forms a skin. The big holes come from steam and the general breadinesd from the carbon dioxide shat by the yeast. It's 100% wholemeal so will need at least two hours to cool down. I'm hoping it doesn't burn. I underestimated the final sugar content. Millard ok burnt toast not cool.

10min @ 240C and 40min @ 180. π€.

Folded and shaped. Total pain in the arse that hydrated.

4hrs + 5 folds/little stretches. 2 minutes excluding washing my hands either side. The reason I'm not kneading and folding it more is the sharper shards of the wholegrain wheat will cut up the gluten, which is developing and the shards will soften (they're pretty soft now). The wheat is undergoing autolysis (starch + amylases -> sugars) and the yeast will eat the sugars. The yeast and salt inhibit that a bit so some breads have an autolysis stage before yeast and salt are added (lots of French bakers do that). Given it will be around 8hours at 20C it should all work in parallel.

500gm of strong wholemeal (wholegrain) flour (Lidl)
485gm of water (tap)
10gm salt (fine sea salt)
7gm yeast (tin fridge)
Mixed it in a big bowl with the handle of a teaspoon while making tea earlier. I have covered the bowl with a large plate and left it somewhere about 20C. I'll give it a few folds at lunchtime then stretches and folds tonight. Then shaping it into a boule and letting it rise again then baking.
I'm aiming at 20 minutes labour. I've used 5 minutes weighing and mixing. I'm timing the doing stuff bits. The problems I can see are sticking and handling at the end - the baking tin or whatever - maybe a pizza stone. It'll be edible - I'll bake at 240C for 10 minutes, then 180C for 45 minutes. Folding/stretching is the easy bit - just wet your hands a little and be quick.
A bit of an experiment. I figure the timings will work well with strong wholemeal because the enzymes in the bread will do their job. Or it could be a sticky mess. I'll spare you pictures because wet wholemeal flour looks like cold, dodgy, porridge.

I went in without any knowledge of what the film was about or any expectations. I tend to go by personal recommendations or a vibe. There is just too much good, and bad, TV or films to sort through and while just following media reviews would probably result in a higher quality generally it also tends towards the cultural median. I know some who will only watch things with an IMDB rating of 7 and above. Which seems like a safe bet until a person goes through any music or film chart from any decade and realises that the one constant is culture is mostly crap, independent of popularity, and we remember the notable bits. The notable and interesting bits persist. That's not implying popularity equals something being rubbish because that's not true either - or in the converse. Just that going on a vibe or recommendation from people is sometimes a better shortcut to what is notable or interesting than charts, reviews, or ratings. Plus, I'm gabbing a load of pretentious bollocks, ish, because what also matters is what a person actually likes. NB my nephew with Thomas and Friends. I veer between hating culture and, kind of, liking it. I don't think I'll ever have that much of a clue because the whole thing is properly mental and that may seem affected but I can assure you it isn't.)

Yesterday I repeatedly watched an advert for kids DVDs, with the eldest, very autistic, nephew, given away on the front of a newspaper, repeatedly watched old VHS tapes (converted to DVD) of Thomas & Friends - with a quite detailed observation of the adverts within/before them, Balamory (Phone Frazzled is the current favourite - Suzie Sweet, who looks and acts a bit like one of my dead grandmothers, gets a mobile phone but doesn't know how to use it properly and starts getting very angry with it), the adverts from the Milkshake! Kids show on Channel 5 with a special emphasis on Thomas & Friends, and mock DVD covers for various Thomas DVDs people, with a certain mindset, have Photoshopped of Thomas and Friends. Thomas and Friends 'Buzz Books', Peppa Pig Books, and assorted other books he is obsessed about. And Lego. Inevitably the 4 year old has some more Lego now and broke up some bits so I rebuilt 3 Lego projects (only 60ish page ones) some bits of them were intact but it generally made sense to take it apart and build from scratch. Minecraft Lego. His older siblings/cousins play/played it, so Minecraft has social status. Four pieces were missing but I improvised. He was insistent I rebuilt and l, being 4-ish, helped in inverted commas. It was a nice day.)

Framed #602 (I've watched it and I don't think it is that great a film. A very competent, notable film, but not my cup of tea. Last night I watched "Bones and All", on Prime Video, which was an excellent film without a single weak actor or any redundancy - with a caveat. It captured the far margins of society and its dangers using cannabalism as a proxy. Which makes it sound awful - and it is in places. The film is 95% gore free. They could have turned the gore down and implied it more often - similarly to Under The Skin (the movie version at least) because I think it will get in the way for a lot of people. Maybe it needs something truly repulsive and spelt out in explicitly to fully capture the theme of such intense social alienation. Beautifully shot, not a wasted frame. I am a fan of the film. I'm not sure I'll watch it again in a hurry because it had an impact. It has cult classic status from the off.)

Framed #601 (nah. I watched Escape Room: Tournament of Champions. Which was OK but a disappointing end. The second half of the screenplay felt rushed, like they wanted to get it done but said most of what they wanted to say in the first film, there were a lot of loose ends, where a characters backstory would be intriguingly touched upon then only expanded on slightly by their actions. Kind of a hybrid of a bad writer telling and not showing: they showed a little bit but also told a little bit. There's nothing wrong with anything that pushes a plot forward, spoken or unspoken, but it didn't work as well as the first film. Not a crap sequel but a "not as good" sequel. And I saw the episode 3 of Rick and Morty which was good - I'm not as keen on the president ones partly because the president character is annoying. Given he prompts such a reaction that's probably a sign of quality. Morty is the best character. In my head it's Morty & Rick.)

The first week of the clocks going backward, to actual GMT, feels a bit grim and because it's often colder, a light duvet becomees the slough of inertia. Didn't watch anything. Gave out some candy but not very much, which is annoying because I assumed there'd be more trick or treaters than there were and I made the portions too small. There was only one proper group of trick or treaters, the mum, two 12 to 14 year old boys and their <6 year old sibling. It's a pain in the arse to keep answering the door, partly why I didn't fancy watching anything, so I'm not ungrateful and I have a tub or sweets if I fancy giving diabetes a fighting chance. I'm cautious about giving away plot detail because I watched it on the basis of the Netflix app recommending it and deliberately didn't find out further details. The spanner in the works of ARM on the desktop is the inverse situation to Apple's Mx ARM chips: Fragmentation and proprietary standards.
1. Fragmentation because unless there are the same kind of standards that apply to PCs, in terms of bus specifications and other relatively open standards, SoC (system on a chip) isn't really a PC. It lacks expandibility, upgrades, and the flexibility inherent in PCs (their major advantage over, excellent but pricey, Apple platforms). ARM is not plain RISC and different platforms could be just different enough to break performance or compatibility. Like the early x86 and BIOS clones from the mid 1980s (IBM had a wholly proprietary BIOS and there is an interesting backstory about how people got around that - but it temporarily held up progress).
2. Proprietary standards because, given the dangers of fragmentation and changes, unless there are agreed upon, open, standards it is easy to get stuck with particular platforms. It's anti competitive, anti freedomand - it's not transparent. I don't mean the hardware should be totally open source but it'd be nice to have a well documented, open, instruction set and interfaces. To quote HHGTTG (insert "Signed an NDA" at least twice for accuracy):

There was a period, from the 1970s through to the early 1980s where, in some films, there was close attention to detail to make actors look as much like ordinary people as possible. Kind of like the attention to detail in Succession which went the other way, portraying a primate elite, down to the minutiae. Didn't watch much TV. I saw Gen V and it was good. I can't help but think the plot arc is that they all become "the heroes of Godolkin U." and get incorporated as second or tertiary characters in The Boys. Following a kind of series/season long 'Dan Harmon plot circle'. Which does mirror life a bit, in that, for many of us we're inculcated to think society works in very particular ways, but reality turns out to be a bit more complicated and less ideologically consistent. A recurring theme of disillusionment leading to good and/or bad. Thing is, even when a person works out how a magic trick works, it still works on a person because brains are wired that way, so knowledge can be as much an abstraction from reality as reality in itself.)
