There is no longer a static example bitcoin.conf, so you have to generate it dynamically using a script (contrib/devtools/gen-bitcoin-conf.sh), but that script is not part of the binary distribution? (right?)
And there isn't documentation listing the meaning of all the configuration options to put into the file (which is what you get by running the above script, I believe)? (maybe I'm wrong? my searching is drawing a blank). As an example of that, see this:

It used to be the case a long time ago that running bitcoind would autogenerate a bitcoin.conf, but that's no longer true either.
How does someone running bitcoind from the binary distribution, figure out how to set config options?

I run my on lnd node and I can send zaps, but Damus opens BlueWallet to do so. I havenβt figured out receiving zaps yet bc I think I need to set up a domain name and ln-url ?

Yeah I sent that TX, or more accurately, Purse.io did. As an employee and bcoin contributor I wanted to make sure we *could* withdraw to witness V1 addresses. It was actually only spendable *before* taproot activated because it encodes a public key of all `0x01`βs which has no known private key. SO it could only be spent as a pre-taproot-activation anyone-can-spend output which were all collected by 0xB10C https://b10c.me/blog/007-spending-p2tr-pre-activation.
Final trivia tidbit: this was also before bech32m so the address I *actually* withdrew to looked slightly different ;-)
