A wireless ISP can definitely out perform NBN in regional areas if it is done properly but it will cost a lot more than $120k..
The biggest use case I can see for it is for communications in a disaster situation where power is out and phones/Internet are down. Meshtastic devices can keep running on battery power for long periods of time or powered from small solar panels so would be easy to keep operating.
It is low speed though so really limited to text only communications.
There are projects to send Bitcoin transactions over Meshtastic although they do need to connect to a Bitcoin node somewhere. Potentially useful for sending transactions from a location where an Internet connection is not available.

Afternoon walk 
Assembled and Meshtastic firmware loaded. It is picking up other nodes so looks like it is working correctly. I don’t have a battery that will fit in this case so powered by usb-c for the moment. #meshtastic

Project for the weekend. New #meshtastic node using the Heltec T114. I’m interested to try this one as it uses the Nordic nRF52840 which has a lower power consumption than the ESP32 based boards so should have better battery life. It also has a colour display. I’ll probably end up 3D printing a different case for it but the one included in the kit will do for now. 
For a firewall I would probably just run it directly on the device rather than putting it in a VM on top of Proxmox. If you want to run other things in VMs then run Proxmox on a NUC (or one of the HP/Lenovo etc mini PC devices that are fairly cheap secondhand) behind the firewall.
