I got as far as a limited but working proof of concept when I discovered that someone had already created this project years ago:
Go here, choose a server and create you a non KYC account. It will generate you a user@torxyz.onion address. You can send and receive from Thunderbird, claws mail, neomutt, whatever with PGP. For extra slickness it allows your normie friends to email you at user@onionmail.info from clear.
