One of the primary tenants of Tails is leaving no trace on shutdown. A VM by definition is not ephemeral in the sense you need some type of destroy operation to take it out. It is also difficult to rig a dead man’s switch on such a setup in my opinion. If there’s points are not a concern, than I suppose there are benefits to having the tails stack knowing you are leaving traces on disk.

how about power efficiency in old Xeons? I Run 2008 MacPro and it seems to be a power hog

You can build data centers with these old ass PCs with xeons in them dirt cheap

I would say both suggested distros are completely n00b friendly. Qubes, wilhile fantastic, does need some technical know and has a much steeper learning curve.
