Wasabi wallet or joinmarket. Coming from Samourai you will probably get along better with Wasabi but it's a desktop tool, so it's a bit more involved than a well sandboxed apk on your phone.

This is same thing as using someone else's Electrum server on Blue wallet or using some Monero wallet while connecting to someone one else's node or paying for a VPN with a credit card. But no is busty Blue wallet or Sparrows wallet's balls over the same thing.
Privacy by trust based system is something that exists whether we like or not. Ultimately the end user/consumer has to do their own homework.

When you use Blue wallet and connect to a random electrum server you are sharing your XPUB.

Of course you did not. Otherwise, nobody would ever connect to any of those 20 or so servers maintained with the sole purpose of collecting uninformed people's xpubs.
If the xpubs collecting mafia were honest they would at least add a warning sign/text saying something like "By connecting to this server you accept that the maintainer can see all your finantial activity and your balance forever. Are you okay with that?"
