Spoon was used, especially in Napoli a couple generations ago. Some Italians still do use them. It was a high society kind of thing, that’s why the plebs don’t like it.
You want to create a new dish, give it a new name. If I order a carbonara and it comes with cream and chicken, I’ll feel scammed.
Stuff like breaking spaghetti make no sense to Italians who have countless varieties of short pasta. Just use the short ones ffs.
