Do you think t-Rexβs were red meat or white meat?
I'm going to assume mostly red meat more like muscovy duck, but I could see it being a bit of both like turkey?

I actually slightly disagree with his take on this. All modern birds descended from a branch of the dinosaur family, sure....but as he astutely pointed out all birds don't taste like chicken. In fact, more things probably taste like chicken than other non-chicken birds. And he's correct in stating that lifestyle and diet would have a huge impact on flavor and fat content. My suspicion is that large herbivores would have been more like beef or venison, but scavengers would be similar to a gamebird.
My contention with this is his statement that an herbivorous dinosaur would taste better than one that wasn't. While taste is purely subjective, some of the most popular meats on earth are omnivores or carnivores. Pork, chicken, duck....none are exclusively herbivore and many derive most protein from smaller critters when given the option.
But we will never know unless someone grows one. I don't know how I feel about that, but it's the only reason I'd ever try "labmeat" π
