Damus, I don't think so, they had to remove zaps on posts as far as I know.
Snort YES. I found that if you hit the advanced button then you can set the destination address there (after scrolling past all the relays).
They do mention that compatibility is not necessarily 100%
It would be good to find out what clients support this feature and which don't.
Worth testing out/playing with. As a fallback, you'd get the zaps to your profile address.

Correct, apple has effectively banned zapraisers.
You could use android client and/or web clients that support zapraisers.
