Get your water from a local artesian spring or a well. I have a good well on my own property.

When I lived in the city i would bring glass carboys to the local brewery. They used to let you fill up outside for free. When they shut that down because of muggings then I had to order Culligan delivery, but that was 15 years ago before I knew about RO.

If none of that is available or too expensive then drink remineralized reverse osmosis water. Have a RO system installed if you live in the city, they are cheap. Fill up a glass 5gal carboy and remineralize by pouring appropriate powders into it. Buy a pottery dispenser to hold the carboy upsidedown. Clean it every month or two. You can follow this formula:

I hate how much water RO wastes. I can't deal with a 4:1 waste to drinking water ratio that many of the cheap systems have, since I live in an RV and that would fill up my galley tank even faster.

4:1 makes perfect sense if treating seawater, but quite ridiculous for fresh.

Darn. Reading up, doesn't look practical to mod the household units as the back pressure would be too high for their feeble pumps.

Those designed for marine applications can... but yeah probably not the right technology for your RV...
