We are unfortunately in a period where paying in Bitcoin does not yet offer these pricing benefits. As you noted; we are still paying the markup. A re-pricing in Bitcoin will happen, and this will become reality. Just more hidden costs of using an inferior monetary system.

Recently I've become more sympathetic to people who hodl and don't want to spend their sats...so long as they don't get on a high horse about it

It’s always happened throughout history. People hoard the good money and spend the bad money until the bad money is no longer accepted. Can’t really fight it.
