How is it private if everybody see the list of your relays? Can anybody else connect to it? Or how does it work anyway?

Nobody else can connect to it. Tailscale is a private network that only you have access to.
If you use Tailscale, no one else would be able to connect to it.
No one can connect — it’s on your local network (you can use Tailscale to connect to own relay from outside of your home over an encrypted tunnel). Moreover Umbrel provides everyone with the same address for the relay if you connect over tailscale (ws://umbrel:4848), so it’s best to only connect that way

So even though no one else can connect, they would be able to see that you are using Umbrel, right?
