When I was a young man first learning to cook for myself I thought clove of garlic meant head of garlic. This seemed like an acceptable amount of garlic flavor in the finished food to me so I stuck with it.

One day I cook for a new girlfriend and she corrected me. I did not marry her. I married the first woman who also loved garlic enough to eat my cooking my way.

I had a very rude awakening when I was working in a nice Italian restaurant and my Sicilian boss came to berate me over how much garlic I used on stuff. He was not a fan of excessive garlic.

As a Cajun, and authority on food in general because of aforementioned certification, I can affirm that 1 whole head does indeed equal 1 clove.

1 clove = 1 head.

1 head ≠ 1 clove.
