How does one do this. I use fold but I thought you couldn’t get rewards to automated bill payments routed through fold. Has this changed? Was I always wrong here?

Not automated. You have to use PayPal bill pay and add your mortgage servicer as a bill.
I use PayPal to pay the bill and I have PayPal set to use my Fold card. It's a great work around.
