I use my insta pot pressure cooker

I swear by it , there is probably a way to do pot roast low in slow in the oven

I think I was successful following a technique from Julia Childs but it takes a very long time

The other thing I cook the vegetables separately from the roast , combining them later

3 lb roast 35 minutes, natural release of pressure

Vegetables are 3 minutes under pressure than manual release

Brown the meat in the instapot , about 2 cups of beef stock with a 3/4 cups of your favorite bbq sauce or whatever

I’ve been using a Carna Asada sauce lately . It’s cool to change the sauces to match your mood

After the meat is done, I take the meat out and add either corn starch/water slurry or butter flour to thicken

It’s easiest pot roast I’ve ever done

I do beef stew this way as well

do you then pressure can it? That's what I'm looking for. I do my roast similar to yours in the pressure cooker or if I'm doing a deer neck roast I'll use the dutch oven. I skip the corn starch though. I do need to find a good thickening agent that's not corn starch or flour though.

We freeze dry most things

Haven’t really learned pressure canning yet

We have all the stuff but the freeze dryer works amazingly, but not cheap!!
