Anyone have a quick rundown to grilling chicken thighs on a gas grill? High or med high heat?
Interwebs say 5-7 min each side and that just seems way too few! Marinating right now, planned on adding bbq sauce to some. #foodstr

*Bone in thighs
Add the barbecue sauce The last 10 minutes of them cooking and you keep flipping
Definitely medium and more time. Fattier meat so is very easy to burn before they’re properly cooked. Baste (with marinade) and turn as you cook will slow it down and ensures a good result.
Cook to temp, not time. You want to get to 170-175 degrees on thighs most times. I do relatively high heat, but medium is good too.
well done!
thighs are done at 172F
breasts at 164F
Haha that works too. I find thighs super forgiving in final temp.
there was a magazine in the ‘90s that had a test kitchen. their whole schtick was to find the “perfect” way to do things.
i remembered these numbers from their roast chicken article. they also said if you use lemon juice, add it right after the chicken comes off the heat, and it will pull it in as it cools.
Ohh interesting! I’ll give that a try
