UX is pretty much subjective. I bought and immediately sold an iPad mini because (among other reasons) I found the UX ugly as hell. I lik a clean setup and with android I can customize everything.
Privacy, yeah, I kinda agree with you. For the average user who buys a phone and uses it for the sake of using it, it makes no sense modding it.
If you are up to the task and value your privacy, you'd buy specific models supportef by indipendent devs who develops privacy focusef custom roms (like /e/os, iodeOS, GrapheneOS, or pretty much LineageOS without gapps).
