Apple is far ahead in terms of ecosystem, but freedom-wise using iOS it's pretty much slavery.
Android is faaaaar superior in this. Play Store bans an app? Find the apk on F-droid or, if not open source, in pretty much every other store.

UX is pretty much subjective. I bought and immediately sold an iPad mini because (among other reasons) I found the UX ugly as hell. I lik a clean setup and with android I can customize everything.
Privacy, yeah, I kinda agree with you. For the average user who buys a phone and uses it for the sake of using it, it makes no sense modding it.
If you are up to the task and value your privacy, you'd buy specific models supportef by indipendent devs who develops privacy focusef custom roms (like /e/os, iodeOS, GrapheneOS, or pretty much LineageOS without gapps).
