Can someone explain the whole “NIP” thing of Nostr please?

NIPs stand for Nostr Implementation Possibilities. They exist to document what may be implemented by Nostr-compatible relay and client software.

Patches of code on the Nostr protocol (I assume)

A NIP can be proposed openly and then different clients may or may not choose to implement the NIP into their app.

Ah - so basically it’s a set of protocols that clients sign up to - and they can pick and choose which ones they use to make a more “personalised” client

sounds like it, although not sure ab the use of the word protocol for the NIPs
