With taproot channels a lightning channel open looks like a regular TX on chain. Can't tell it's lightning. So how do you propose this channel open will be censored?

Most of on-chain transactions over the past year are inscriptions/shitcoinery, they all use Taproot.

but inscriptions are obviously nonfungible and dont increase the anonset of anybody

unless I'm mistaken
