Brains run on fat

No they don’t. They run on glucose

Everything runs on glucose if that’s what the fuel is. Humans lived for centuries without ample access to carbs. How can we fast for several days and not immediately die? Why do infants need mothers milk, which is nearly 100% fat?

When did we live without ample access to carbs?

And I know you can live without carbs, your body can go into ketosis to burn fat or glucogenesis, but for proper body and brain function, you need to balance your macros

And babies don’t think

You might want to research glucogenesis. The process by which protein is turned into bioavailable sugars.

I hear that dementia is a disease where the brain is incapable of absorbing the carbohydrates a person eats. What do you recommend in that case? How much of a person's diet should be carbs if none of them end up being absorbed?
