My latest batch of salted duck egg yolks is ready. I also just finished a batch of Rye Whiskey whole seed mustard (mustard caviar) and found some awesome fermented sausage on the last Costco run.

My wife is from Indonesia and went to college in Singapore. One of her favorite dishes is chicken with salted duck egg (yolk). It's basically chicken cut into bite size pieces that's been lightly battered and glazed with a sauce made from salted duck egg (yolk), birds eye chilies, garlic, curry leaves, butter, and coconut cream (or condensed milk). I wish I could eat it, but I have an allergy to duck egg đŸ˜…
