Most 'Jumbo' eggs in the grocery store are produce by pullets, young birds just coming into lay. When young chickens just begin to lay there's much higher irregularity, and they may lay a very tiny egg one day and a jumbo double yolker the next. As they mature, they laying cycle regulates and they tend to lay just about every day for 6 or 7 days and then take a day off.
