I'd say aim for one with low latency to your location and decent enough hashrate to meet the "pool luck" regularly enough for you to run the miner. From experience your pool will start finding blocks the moment you jumped on another pool because that pool solved a lot of blocks, until you joined 😉

The down days are there, but rewards on a good day outweigh the consistency of calculated and predictable fpps imo.
If you arent gonna be renting hash to augment your mining and get yourself to 1 millions sats mined, the exit fees for withdrawing from pool are a real kick in the behind. So id recommend augmenting your mining periodically in braiins with hash power purchased from rigly.io... otherwisr just yolo and solo mine with https://www.solo.ckpool.org/
