Sweating your steak in a plastic bag is disgusting.

Reverse sear is perfect.

Don't fall for the hype.

*Trusting* a couple probe thermometers is literally more fiat than plastic.

Doesn't matter to me though, we use glass 😏

I would use SV to do the initial heating but I don’t have one.
