I made some supposedly low carb bread and it actually tastes pretty darned good! I had to make a concious effort to stop eating it after 4 slices.
Time will tell how low carb it really is. I can measure these things, albeit inderectly.

Low carb bread typically means high fiber bread. Over eating fiber in one sitting will definitely have feedback.
I found this a while ago, and used it frequently. It's a little nutty, but tasty while hot. Having it with butter and preserve, jam or honey. Cold, it's fairly good for salad and meat sandwiches. It's soft and a little chewy, just like a good fresh bread should be. Maybe you'll find it useful.
