To be honest, my opinion is not impartial. I don’t like acrylics but I used to be a hardcore watercolorist and I’m glad I tried gouache out! They are just as fun!
Do you layer gouache like watercolors? I’m the opposite; like acrylics, not so much watercolor.

Which you can't do with acrylic. And unlike watercolor you can easily layer with gouache because its more pigmanted. So it has the best of both worlds, in my opinion.

What’s Gouache?
it's a type of paint that is pigment suspended in gum arabic or similar

both of these paint types are like watercolour in that they are water based but can carry a lot more pigment so they are more rich and opaque and can be layered more, and if the pigment is zinc oxide or titanium dioxide you can even fully mask over top of other paintwork
