Normies tend not to get the difference between Bitcoin and altcoins and assume since most altcoins are scams then so is Bitcoin. Bitcoiners are trying to differentiate the two by saying "Bitcoin, not crypto" so people know they should be looking into Bitcoin only if they are interested in learning. It's hard to explain the differences to someone in a short amount of time, so it needs to be summed up like that to get the message across.
