They are obligated to keep a record of your withdrawals. In EU, we are asked by a pop-up asking are we sending to ourselves or someone else.

Whatever you do with your non-strike wallet, they can't see nothing. They only know you withdrawal this amount and that you confirmed you send it to yourself. If the government is on you, you might need to prove where those funds were spend.

There's even a fight between Monero and Lightning folks that the Lightning is way more private then Monero.

Strike can definitely see you sent that transaction and how much was sent.

But it depends who else you're trying to hide info from (general public, routing nodes, sender), how you're using it (blinded paths, ln proxies), and what wallet you're using (custodial vs LSP vs your own node)
