I was wondering about running Bitcoin Core in one VM and all the rest—like Fulcrum, a block explorer, and LND—in separate VMs. This way, I could experiment with different distributions, configurations, etc. Do you think this could be a good idea?

Depends. If it's only for playing with a few sats in channels, that would be a great way to learn and not matter much, but the higher the total liquidity in channels the more serious I'd take robustness. A corrupt database or lost channel states can mean lost funds in the end.

I should say, that I am no expert in lightning node operation, so if you are going to put serious amounts on it, consult a real expert and not me😉
