I've never met anyone who celebrates Hanukkah neither, I'm sure they're out there just haven't seen em.

I partake in my in laws Chanukah celebrations. Yankee swap, latkes, menorah lighting.
That said it's not a high holiday so it's not nearly as big a deal as passover, purim, rosh hashana, or yom Kippur.
Mostly just an excuse to gather with family, eat food, and share gifts. And gamble if you bust out the Dreidl.
