The universe is expanding, which means the time into the past is increasing. That means at some point in the future there will be no stars. If we evolved st that time think of all the knowledge we wouldn't know we didn't know. Our fascination with the stars drove many early mathmaticians and scientists.

The color as perceived by us changes, but ultimately the light goes away altogether.
