Do you have a good thermometer? You’d be surprised at how many people don’t use a thermometer when cooking meat. That is the only way to hit that perfect temperature and ensure nobody gets food poisoning.

I have one but its very very very slow.

Any recommendations?

Anything digital. If you start getting into roasts or slow cooking/smoking/bbq you will want one that you can leave in so you don’t have to open the door.
