I notice different bacons have different properties when cooking.

Back in the day, you cook bacon, they get crispy and they shrink. Their fat also turns white and hard as the pans cool.

I’ve noticed recently bacon doesn’t get as crispy, and small and also that the grease stays liquid in the pan. Is this the seed oils in the pig fat???

I notice with a good quality bacon, organic and all that. Pricey as well. Will have properties of the old school bacon.

Thoughts??? Or bro science.
