Collecting spruce tips and immature cones today to try my hand at making mugolio for the first time. It's just sugar and spruce tips/immature cones layered with sugar and allowed to ferment for several weeks. It creates a thick syrup with a fresh "piney" flavor. To buy it costs $25-50 per half a cup. But to make it costs mere pennies.

I believe any species of fir or pine will work. as far as uses it can be used in place of maple syrup in lots of things. I've never tried but it is supposed to be good with game meats and in cocktails. Just sounded like something I wanted to try.
