I think a temporary SoV without the volatility of BTC is probably the main use case. As far as finding numbers on this. I have no clue where to begin looking.
I think there are only the two you mentioned irl
SOV through btc volatility. Some could prefer to have monthly spending in usd while long term savings is in btc.
Maybe this is interesting for you:
Familiarity. Seems like people use them in daily commerce because the coins are digital versions of the fiat that goods/services are priced in.
This isn’t a long term use case. Ideally stablecoins would be a temporary staging ground to get people into digital currencies. Then they see that Bitcoin is the highest quality digital money and they naturally move into that.
