I like the bitkey, but the security process is much more complicated than a seed phrase.

The goal is not necessarily to make the set up process easier, but to make it easier to secure bitcoin and harder to lose
I use nostr:npub1tkey6tcfk0jf2ageje7xvqnnph4443h4pc4aqesuqjeywyke073qfmwral and is very easy. What did you find complicated?
The setup process is confusing and uses complicated language.
I had to setup a Mobile Key Backup. Which I dont know what that means. It says i need to keep this safe in case i changed phones.
Then i had to setup the Emergency Access Kit. It says that i need this in case If i cant access the BitKey app.
So no i have to take care of two backups. and not lose my phone or lose delete the app. i think? i am not sure. 4 items i need to take care of.
And then because this was too fragile, I also had to add a person to be a backup as well.
So now i have a 5th item to be worried about and ask the person to take care of the backup with me.
Then add to that, maintaining access to email and phone number.
That is a list of 7 things i know to know why they exist and how should i take care of them.

Very easy, don't you find easy to follow the steps? Maybe you don't know why the steps are necessary but that is easy it's easy.
Maybe. I found it overwhelming.
Can I open my wallet on another device? I want to give my Bitkey to my wife. but im not sure how to start over. should I delete all the current backups and start fresh? or can I just move to a new wallet?

I'm sure it works just fine as long as nothing goes wrong. However, it's good security practice in any context to test execute a full recovery process to ensure it will work when you need it to (e.g. if your Bitkey device stops working). Obviously, I can't speak to whether you have personally done so; but, I imagine it's not practical at all for most to simulate acquiring a new Bitkey device (by factory resetting the one you have), have Bitkey generate new keys for the new device; and move funds to the new keys on your behalf (at a Bitcoin network fee cost to you, the user)... and even then, this potential scenario creates an inherent reliance on Bitkey servers to be there for you when you need them to be (i.e. this part of the recovery process is out of your control).
... o yeah, I forgot to include the part about having to wait out the 7 day "Delay + Notify" period after you ask Bitkey to start the recovery process.
