Better than me being centralized in google mail/docs like I am now.
What would you recommend as an alternative?

You may have a point but there are trade offs
Can you run your own server and control your own data? Do not rely on other companies to have everything.
Install on a spare computer or buy cheap refurbished desktop, run linux and install Syncthing or Nextcloud for file sync, Keepass for password manager, Tor for VPN. Mail from Proton is probably ok, just never put all your eggs in one basket
I want to get a nostr:npub126ntw5mnermmj0znhjhgdk8lh2af72sm8qfzq48umdlnhaj9kuns3le9ll in the next month or so, this might make all this easier for me
