I've set up NWC with my Alby Hub a few weeks ago.

I'd like to go back to WoS, without NWC obviously, to send zaps while my LP is down.

How can I do that?

Long press on the ⚡ button.

Delete all the strings down for NWC.

Save.

Now it should ask you everytime you press ⚡ which wallet to send from.

You should never rely on a single lightning channel. Common advice is to have at least two or three channels to well connected nodes. That way if one is offline or otherwise lacking liquidity you will still be able to transact.

I have yet to dig into how to properly set it all up but what's happening right now proves your point.

I’d definitely recommend to open at least one more channel for redundancy. GL learning lightning is a process and takes some time to understand. Lots of noderunners out there happy to offer advice and answer questions if you get stuck!
