I doubt Apple runs a LLM on your phone.
don't know what features they're offering or promising to offer (and I'm not an AI expert at all) buy I believe that iPhones are already capable of quite interesting AI stuff.
Would be interesting to know if they are doing it locally or by calling home, just out of technological curiosity!
