Tails with persistence mode, but it's sort of the opposite of what it's intended for, honestly... Still a decent solution though. But I'd recommend you embrace more of the amnesiac mode and use an external USB drive for persistent data.

Oh, I'm an Arch fan. I ran it successfully for over two years on an older laptop I had a few years ago. Could resolve all occurring problems by spending uncountable numbers of hours in the Arch wiki and forums. Maybe I'm a little bit of a tinkerer 😁. Today I run a out-of-the-box solution.
