EVOO, fresh lemon juice, a good amount of garlic, and za’atar. Then, a few generous shakes of Trader Joe’s Everything But the Bagel seasoning.

If I’m not in a hurry, I’ll roast the garlic and cook dried chickpeas, but even canned beans and raw garlic still taste great.

Have you used the baking soda trick?

Yes, if I’m soaking and cooking dried chickpeas I’ll do that. The skins don’t bother me when I use canned beans, and I blend it long enough in the food processor to get the right texture.
