Rn I think nostr.org is the best, simple one pager to share that says what nostr is and how to get started with clients and signing

Agree.
I prefer https://www.whynostr.com - most pages are lists of links to resources, so someone can follow through on whatever interests them, and I find the home page more welcoming (at least for the folks I know) because it avoids dividing into the ‘protocol’ language right away.
