Starting a meeting requires logging in with big tech, or otherwise I have to self host it which I won't do

Hmmm I do selfhost it and Iā€™m quite happy with it. A login is not required afaik.. I use it quite regular for online calls with clients

That's bc freedom tech prefers anonymity, which is slightly antithetical to using video calls

Yes, you are correct. We have Jitsi as an add on feature for the Sovran Pro. Makes it easy for folks.
