How do I update my lightning address on the Amethyst client? Say I created my Nostr account with Alby at the start, and I want to switch to Mutiny wallet?

On Amethyst I can change my lightning address on the settings of my account.

It's in Profile, edit icon, then here
You should see something like this (my language is Italian, indirizzo LN is LN address )
