Yum! I don't can these days but I do pickle the quick n dirty way with scraps, like ends or little pieces of carrots and red onion, mostly. With all those leaves, I bet there are some cool things you can do to make pigment for paints, or even poultices to keep in the freezer. What a bounty!

We make broth from scraps!

I learned the hard way that a chain glove is wise to have doing that job. Fun project though. Worth the effort!
